Organic Carrot Blueberry Muffins

Healthy Blueberry Muffin Recipe

To curb your sweet tooth, start the day, or get a boost of delicious nutrients at any time, blueberry muffins are always a favorite. However, in order to get the most out of this breakfast pastry, you have to pack it with the right ingredients. Making a healthy batter nourishes your body with vitamins, minerals, protein, and good carbohydrates to get you going. This particular organic recipe makes 24 muffins.

 

What You Need

  • 1 1/2 cups of whole wheat flour
  • 1 1/2 cups of white flour
  • 1/2 cup sugar (can substitute with turbinado or raw honey)
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tsp cinnamon
  • 1 tbsp vanilla sugar
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 4 large carrots (grated)
  • 1 large zucchini (grated)
  • 1 1/2 cups fresh blueberries
  • 1 1/4 cup sunflower oil
  • 4 eggs
  • Zest from 1 lemon

 

How to Prepare

  1. Preheat oven to 350℉.
  2. Mix sugar (or alternative), oil, vanilla extract and eggs thoroughly for 5 minutes.
  3. Mix dry ingredients together (whole wheat and white flour, baking powder, baking soda, salt, cloves, ginger, cinnamon and vanilla sugar).  Combine dry ingredients with wet ingredients and mix until just combined.
  4. Introduce the carrots, zucchini, and finally blueberries. Spoon into muffin cups/pan and lightly dust with cinnamon if desired.
  5. Bake for 30 minutes.
